Chez Mumtaj is an AA-rosetted boutique-style restaurant that showcases a unique style of French-Asian haute cuisine. The menu is as progressive as it gets, and has earned the eatery an array of accolades – Chez Mumtaj was named ‘Best Restaurant’ and the overall winner at the 2011 St Albans Retailer of the Year awards, and was voted one of The Independent’s top ten best Asian restaurants in the UK for 2010-2011. Executive chef Chad Rahman (chef profile page 63) achieved AA rosette Academy Hall of Fame status in 2011.
The main restaurant is unashamedly soothing, luxurious and opulent. There is also a beautiful private dining room. The Saffron Lounge echoes many of the charming characteristics of the restaurant, with rich mahogany panelled walls, leather banquette seating, antique-mirrored walls and private booths, and is a great place to enjoy a pre or post-dinner drink.
Chad Rahman is the culinary force behind Chez Mumtaj. His mission is to impart the essence of stunning French and Asian cuisine, showcasing a repertoire of modern dishes from India, France, Thailand, China and Malaysia. His eclectic menus use progressive approaches to depict a diversity of traditional dishes with a contemporary twist. Expect innovative starters such as seared foie gras with vanilla, honey and Szechwan pepper crush or confit of cauliflower purée and hazelnut crumb oil; and mains like wild-catch Alaskan roasted black cod in a kaffir-lime curry emulsion with freshly grated coconut rice, coriander, apple and mango salsa and Norfolk coast samphire grass.
