Made with Chairman's reserve rum, Courvoisier brandy, raspberry syrup and almonds, this is one drink that is most definitely exceedingly good. Food-wise, brasserie-style offerings such as the sous vide salmon fillet with asparagus, shallot and cherry tomato tatin and celeriac purée further showcase Amicus' ambitions to be contemporary and exciting - ambitions I would say they have achieved
