Pascal Aussignac moved to London 13 years ago, and over the last decade he has worked tirelessly to introduce London diners to the gastronomy of his native Gascony, bringing rustic French cooking right up to date with bold and exciting combinations of texture and flavour. Ever since it opened in 1998, Club Gascon has received rave reviews and in 2002 it received a coveted Michelin star.
Club Gascon offers mouth-watering starter-size dishes that allow diners to sample three or four delicacies from five different sections of the menu. Each one has an intriguing heading. Take for example ‘la route du sel’ – named after the ancient French salt route from the Mediterranean coast to the province of Rouergue, just north of Toulouse. ‘Le potager’ features a bountiful selection of delicious vegetarian dishes, like grilled artichoke, barigoule and diabolo sauce. Moreover, ‘les foies gras’ is Club Gascon’s showpiece; nowhere else in the UK offers such an impressive range of these exquisitely rich, buttery and delicate goose and duck liver terrines.
Last but not least, Club Gascon’s dessert menu presents creations that bring together traditional culinary methods with 21st-Century techniques, such as a smoking chocolate cigar with a coffee and Armagnac granité. All ingredients are seasonal and sourced from small artisan producers from southwest France – as such, they are of superlative quality and authenticity.
