Expect seasonal dishes that creatively blend classic cuisine with modern techniques – the citrus-cured salmon and torched smoked Devon eel with cream cheese, cucumber and red onion, and the boudin of guinea fowl with kohlrabi remoulade and pomegranate salsa are wonderful starters.
For mains, the duo of Creedy Carver duck – bon bon of confit leg, roasted breast, curried celeriac purée and pommes fondant – is divine, as is the 28-day dry-aged fillet of beef with forest mushrooms, caramelised onions and sunblushed tomatoes. Those with a sweet-tooth should indulge in the salted caramel panna cotta with chocolate ganache and roasted white chocolate ice cream, or vanilla crème brûlée with vanilla cream and peanut brittle. If you want to really treat yourself, opt for the exceptional six-course tasting menu. You can expect to be treated to innovative dishes including caramelised cauliflower with golden raisin and apple, and loin of Elston Farm venison with butternut squash, Parmesan and truffle.
