You might start with the likes of torched mackerel served with Dorset crab apple jelly, aerated brown crab mayonnaise and a squid ink cracker. Follow with sumptuous venison en croute made with confit venison shoulder, accompanied by potatoes and red cabbage purée. The dessert offering is equally impressive thanks to dishes such as passion fruit mousse encased in a layer of milk chocolate mousse, served with mango and chocolate sorbets, hazelnuts and chocolate crumb. The restaurant’s cellar is well known for its excellent selection of fine wine, and an expert sommelier is on-hand to recommend the perfect tipple to complement your food, showing an innate understanding of individual palates.

Those who prefer a laid-back meal can enjoy the same excellent menu in the hotel’s brasserie which is located at basement level. Something of a hidden secret, the basement has a relaxed, jovial atmosphere, and alongside the brasserie, it boasts an informal bar, pool table, lounge area, and the hotel’s in-house florist, who runs classes and workshops that have proven popular with the local community.
