Truffles' menu is based on seasonal ingredients and uses local produce where possible. Dishes are treated in the simplest of ways, letting the ingredients speak for themselves, with great emphasis on flavour and presentation. The whole dining experience has been thought out in meticulous detail; for example, starters include Brixham crab spring roll with a salad of fennel, pink grapefruit and pickled ginger, and Barbary duck terrine served with pear chutney and toasted brioche. For your main course, choose from roast loin of Blackwater Estate venison, sweet-and-sour red cabbage and creamed celeriac gratin with walnuts, and Sussex Large White fillet of pork with butternut squash purée, warmed pickled mushrooms and crisp pork rillette. Seasonal fish dishes and vegetarian dishes are also available. The food is excellent value for money and therefore a homemade dessert is a must, with delights such as glazed vanilla rice pudding with pear sorbet, ginger biscuits, caramel cream, bramley apple compote and roasted almond foam.
