Seasonal starters might include venison tartare from the Lake District and crab soup with a scallop macaroon, while the mains selection may feature a tempting array of meat, game, fish and shellfish dishes – the Cumbrian smoked loin of Herdwick lamb, the fillet of halibut with squash and ginger and the roast monkfish with squid ink and crab tagliatelle are among the highlights.
