Head chef Show Choong creates innovative variations on Japanese classic, made from fresh organic ingredients. His menu changes with the seasons, but you can always expect an extensive list of traditional sashimi and maki, and modern sushi nigiri enhanced with the likes of caviar and truffle oil. Asian-Latin fusion dishes make a regular appearance among the warm and cold appetisers. The abura bouza tataki – slices of seared butterfi sh with coriander, radish, jalapeño and truffle citrus soy – is much admired, and the kani no karaage – deep-fried soft shell crab with salad and jalapeño salsa – is also an excellent choice.
Three different varieties of green tea are available to accompany your meal, as is an exclusive range of other fine teas, including the exceptional 1970s raw Pu’erh Supreme. Other drinks include Kirin beer, fine wine by the glass or bottle, and Japanese whisky or traditional plum wine as a digestif.
A three-course set dinner is available for £45 and there is also a nine-course tasting menu, including dessert, for £59.90. For an exclusive experience for two diners, reserve the kyodosakusei tokubetsu menu – seven dishes expertly chosen to harmonise with the refined flavours of 2006 Dom Perignon.
