The Foundry restaurant can be found tucked away on a side street within 100 metres of Euston Station. In fact, it would be easy to miss this establishment, but to do so would be to deprive yourself of a truly first-rate dining experience. The hotel restaurant offers modern British cuisine and exquisite cocktails. Guests are greeted warmly and informally and made to feel instantly relaxed.
Ethically sourcing ingredients are at the heart of the venue's beliefs, the use of which has contributed to it winning multiple accolades. On the evening of our visit, we dined from the à la carte menu, which was packed with tempting fare. I began with slow-cooked plum tomatoes with basil sauce and micro herbs, with grilled organic sourdough on the side. Fresh, light and sharp, it really whetted my appetite. My dining partner enjoyed smoked mackerel served with baby potatoes, salad, creamy mayonnaise and crispy croutons. I couldn't resist sampling a little of the fish for myself, which was beautifully moist and skilfully cooked.
For me, the main course was the highlight of the meal. I was treated to roasted pork belly, which showcased succulent meat topped with juicy scallops, served with smooth mashed potato, curly kale and rich red wine jus. Meanwhile, the herb-crusted lamb shank was so tender it just fell off the bone, and the sweet-potato mash and sticky honey-glazed baby root vegetables on the side were delectable. In both of these dishes, the head chef demonstrated fantastic levels of talent.
To round off our evening of culinary delights, my companion ordered a divine melt-in-the-middle chocolate fondue with fresh pear, pineapple and strawberries, while I was quite taken with the prospect of a selection of the finest British cheeses with homemade digestive biscuits and quince jelly. The chef talked me through each cheese, which only added to my enjoyment - I relished every mouthful. The Wesley is not just a great hotel in central London; it also boasts
a restaurant that I would highly recommend to foodies everywhere. Soon there will be even more on offer, when the mezzanine floor restaurant, which offers a new intimate ambience and extra space, opens in March 2016
