The Spotted Cow pub in Holbrook has become something of gastronomic hotspot in recent years. Run by Fiona Gilchrist since 2003, the pub exudes a traditional charm. The warmly lit interior boasts low beamed ceilings, walls decked with horse brasses and a wood-burning stove.
In addition to the award-winning carvery and classic pub menu, there is an adventurous specials board, which changes frequently at the behest of head chef Rob Baker. Ingredients are locally sourced where possible and special diets are catered for; they even serve gluten-free Yorkshire puddings.
After sipping sparkling Kir Royals, we opted for starters of homemade chicken liver paté, and a sumptuous Stilton-and-spinach-stuffed mushroom. My main was pheasant, served wrapped in bacon with a rich chasseur sauce. My partner sampled a meltingly tender fillet of sea bass served on a bed of Mediterranean vegetables.
The desserts are well worth saving room for, especially the selection of devilish sundaes, and the brandy baskets filled with locally produced ice cream and a medley of red berries were a delight.
