Overnight oats with strawberries, bananas and honey

Overnight oats have been doing the rounds on the food blogosphere for some time now, and with good reason – filling, easy to make and almost endlessly versatile, overnight oats are the lazy person’s way to make a wholesome breakfast.

This is one you can literally make in your sleep. Before you head to bed, fill a container – I use a Kilner jar – with about half a cup of oats (depending on how hungry you think you’ll feel in the morning), add some liquid for the oats to soak up overnight, and pop the mixture in the fridge. I usually use semi-skimmed milk, but you could also pour in equal parts natural yogurt and milk, or soya or almond milk – I’ve even seen some bloggers use orange juice. The amount of liquid you add is down to personal preference – I usually use an equal amount of oats and milk, resulting in a nice, creamy texture.

Of course, porridge oats on their own aren’t very exciting, so you’re going to need toppings. Again, what you add is up to you – I like to stir in a bit of honey before I put the mixture in the fridge, then add some chopped fruit just before I dig in. You could add seeds, nuts, dried fruit, jam, or, if you’re feeling decadent, a light sprinkling of chocolate chips.
