Today – the second of our sandwich-a-day celebrations – saw Morag Davidson build a beast of bread, Moroccan chicken, aubergine, tomato, red onion, feta cheese, courgette, lemon juice and apricot jam. This scrumptious sarnie is not only delicious and nutritious, but cost-effective too – as the filling is leftovers from last night’s dinner. Of course, this also means none of last night’s dinner was wasted or contributed to landfill! It’s a grey old day today, so Morag enjoyed her supersize sandwich on the office sofas, browsing Moroccan summer holidays…
