Next stop a Michelin star

Diners already travel from far and wide to sample the food at the Bricklayers Arms in Flaunden, but now the 18th century freehouse has won national recognition from the prestigious Michelin guide.

Earlier this month, the award-winning pub, which serves British-French fusion cooking, was named as a new addition to the 2008 edition of Michelin’s Eating Out in Pubs guide.

The guide aims to highlight the best food-serving pubs in the UK and Ireland, and the Bricklayers was the only new pub to be featured from Hertfordshire.

Derek Bulmer, the guide’s editor said: 'Cooking in British pubs has reached new heights and there is a huge choice available to diners. Some pubs are taking the organic route with the help of small, local suppliers while others focus on regional specialities and long-established local recipes. Some serve creative, contemporary cooking with more of an international flavour, but equally there are plenty of places offering traditional British favourites'.

Since taking over in 2003, owner Alvin Michaels has transformed the pub's fortunes, by creating a menu that focuses on the best quality, locally sourced ingredients.

The result has been a stream of accolades. Last year, head chef Claude Paillet was crowned the nation's top pub chef for the second time by the Publican magazine, and he is currently a finalist for the National Publicans Awards 'Food Champion of the Year'. Earlier this year the Bricklayers was also named and awarded as one of the six top Freehouse pubs in the UK by the Publican magazine.

For Michaels, this recognition is duly deserved. 'Our team has worked so hard these last years and now diners all over the country will know about us. Who knows this could be the first step to us getting a Michelin star of our own.'
