Hello Manchester, I am Michael Caines...

I am delighted to introduce this excellent new guide to eating and drinking in Manchester and at the same time to introduce myself to you. It’s been an exciting time for my team and me as we are in the process of creating our latest ABode here in Manchester, a stylish boutique hotel with Michael Caines Restaurant, Champagne and Cocktail Bar, as well as a more informal Café Bar and BarMC. The full transformation of the Rossetti into ABode Manchester will be complete in 2008, and I look forward to welcoming you to what we are confident will become one of Manchester’s premier dining venues.

I have spent a great deal of time here over the past months, and I’ve come to appreciate and respect the free-spirited way that Mancunians live and enjoy life. Coming from Gidleigh Park, in Dartmoor, where I’ve been cooking for the past 14 years, and from my hometown of Exeter, where we opened our first ABode, it’s exciting now to be in such a lively and vibrant major city. Manchester is so rich in cultural pursuits such as theatre, music and arts, and of course sports, entertainment and much more. It’s a place that truly offers something for everybody and this is evident in the city’s vibrant, cosmopolitan and multi-cultural range of eating out establishments, too.

For those not familiar with my cuisine, I’ve made my reputation cooking two-star Michelin food at Gidleigh Park based on a modern European style that is entirely personal to me, above all making full use of the best, freshest seasonal ingredients sourced locally wherever possible. I truly believe that every great cuisine must be rooted in the local and regional. At Gidleigh Park, I have been a champion of the foods of Devon and the South West. In each of the areas we have located our ABodes, in Glasgow, Canterbury and Exeter, my chefs have similarly been charged with discovering the best suppliers of local and regional foods to serve in our Michael Caines Restaurants.

Certainly we’ve already discovered a wealth of superlative produce in Manchester and the surrounding countryside. Ian Matfin, who has worked alongside me as my head chef at Gidleigh Park, now leads my team here in Manchester. As a northerner himself, Ian has been enjoying exploring and discovering the best suppliers, fishermen, and butchers, as well as utilising fantastic local and regional ingredients such as excellent local beef and lamb, fish and shellfish landed at Fleetwood Harbour, local smoked fish, Goosnargh duck, Bury black pudding, organic vegetables and outstanding farmhouse cheeses from Lancashire and Cheshire. Manchester and its surrounds most certainly are rich in every way.

This Festival, by all accounts, reflects in every way what an exciting and vibrant city Manchester is – and that you really can eat your way around the world here.
